Heinrich is an acclaimed chef whose style blends refinement, mastery, and individuality. Before joining the FUME team, Heinrich led the kitchen at NOA, a restaurant awarded the Michelin Bib Gourmand distinction.
He has honed his skills both in Estonia and Brussels, bringing an international perspective and a multi-layered approach to his craft. Beyond the culinary arts, Heinrich is also passionate about visual art and cattle farming – an unexpected combination that shines through on the plate in thoughtful details, bold flavor pairings, and a deeper appreciation of the ingredients.
